Peach Melba is a dessert of peaches and raspberry sauce with vanilla ice cream that can be enjoyed any time of the year, but preferably in the warmer months when fresh berries and peaches are locally available.

  • 1.5 teaspoon(s) Cornstarch
  • 1 tablespoon(s) Water
  • 3 Peaches
  • 0 Vanilla Ice Cream
  • 1 Pint(s) Raspberries
  • 1 Pint(s) Raspberries
  • 0.5 cup(s) Currant Jelly

Directions


Mash the berries with a spoon, add the jelly and bring to a boil over a low heat. Mix the cornstarch with the water and add to the berry mixture. Cook, stirring, until clear. Allow to cool. Place each peach half, cut side up, in a dessert dish. Top each with a scoop of ice cream and pour the cold sauce over them. Garnish with a sprig of mint.
