Gazpacho (Cold Tomato Soup)

From a tomato base, this is a superb soup that incorporates raw vegetables and commonly served cold with a rustic slice of bread.

  • 1 Garlic
  • 4 Tomatoes
  • 1 Bell Pepper(s)
  • 1 Cucumber
  • 1 Onion(s)
  • 0.25 teaspoon(s) Black Pepper
  • 1 tablespoon(s) Olive Oil
  • 0.5 cup(s) Water
  • 0.25 cup(s) Lemon Juice

Directions


Wash tomatoes. Cut out stem end and chop tomatoes finely. Wash, remove seeds and finely chop the pepper. Wash, peel and chop cucumber and onion. Mince garlic. Place prepared, chopped vegetables in a large bowl and blend in other ingredients. If you have a blender or a food processor, simply blend prepared vegetables and other ingredients until coarsely chopped.
