With the advent of the 6th generation of Bishop’s stepping into leadership roles, Bishop’s own Hard Cider has taken on a bold new identity - Daughters & Sons Hard Cider - named in honor of Bishop’s women led team. This fresh new direction also inspired a complete transformation of an existing barn at our Main Orchard into ‘The Cider Hut & Garden' - a unique indoor/outdoor setting among the apple trees serving up our hand crafted ciders and wines.

As one of the sites on the Connecticut Wine Trail, we are proud to offer daily tastings Farm Market Wine Bar, which also features an exceptional selection of statewide varietals.
Wine tastings are offered seven days a week without an appointment. Tastings are $10/person. As a courtesy to our staff and guests, we do ask for a party of ten or more to please call ahead of time to ensure everyone can be accommodated comfortably.

Burton - Dry
Rooted in the rocky soils of the Connecticut shoreline, where our founder, Burton began in 1871, we craft our cider using time-honored techniques. Here we've blended bittersweet and heirloom apples like Dabinett and Ashmead's Kernel to offer you a bold yet nuanced dry cider.

Farmhouse - Semi-Sweet
New England farmhouses have long pressed autumn's apple harvest and let it bubble away over winter, creating hard cider for spring & summer. In that tradition, we welcome you in to relax and enjoy this refreshing semi-dry blend.

Golden - Semi-Dry
Golden Delicious and Golden Russet apples excel when fresh, baked, and pressed. But when fermented they shine even brighter. Taste the brilliance that inspired us and discover their unmatched vesitility in every sip.

Crosby - Black Currant, Semi-Dry
Raised amidst our cider orchards, our loyal farm dog, Crosby, possessed an unparalleled familiarity with the land. To honor his memory, we crafted this cider, infusing it with a splash of black current juice for a distinctive bite and allure.

Albert -Blueberry, Semi-Sweet
With every drop of this blueberry cider, you taste our grandfather Albert's legacy - the dedication to his blueberry bushes in every drop. It honors his spirit and the simple joys of hard work. Cheers to Albert and the sweetness he left behind.

Lillian - Raspberry, Semi-Sweet
Our great-great-grandmother Lillian endured the Civil War, lived through WWI, and secured the right to vote with quiet strength. Like our long-standing, resilient raspberry fields, she thrived against adversity. So join us in raising a glass of this raspberry cider to her enduring spirit.

Stonehouse White - Apple Wine
We've taken the superb reputation of Bishop's sweet apple cider and fermented it into apple wine with a fresh, fruity bouquet and a hint of oak. A dry wine, it reminds one of chardonnay and complements fish, chicken, pork, and pasta dishes. Serve chilled.
Apple Raspberry Blush - Apple Raspberry Wine
The serenity of our raspberry fields is captivated by our semi-dry raspberry wine. The superb reputation and flavor of Bishop's sweet apple cider has been aged to perfection by Bishop's winemakers. It compliments beef, fish, pork, chicken, and pasta dishses. Serve chilled.
Honey Peach Melba - Apple Wine with Honey
Our peaches lead the season, the first to blossom, first to invite bees, and the first to bless us with juicy fruit. We press our early apples and ferment them with ripe peaches, and raspberries to create a fruity, tart, robusy wine naturally sweetened with honey from the same bees that polinate our orchard. A true farm to table experience.
