  • 4 Quart(s) Cranberries
  • 3 cup(s) Water
  • 3 pound(s) Sugar
  • 0.5 cup(s) Orange Juice
  • 2 tablespoon(s) Lemon Juice
  • 2.5 ounce(s) Gelatin
  • 2 Quart(s) Heavy Cream
  • 1 tablespoon(s) Vanilla Extract
  • 0.5 cup(s) Confectionery Sugar

Directions


Wash the cranberries. Combine first three ingredients and bring to a boil. Cook four or five minutes or until the berries pop. Soften granulated gelatin in the orange and lemon juice and add to the hot cranberries, mixing thoroughly. Cool. Chill until slightly thickened. Whip the heavy cream, adding pure vanilla extract and sugar. Fold into the cranberry mixture and freeze until firm. 50 portions.
